Fennel is crunchy and slightly sweet, adding a refreshing but strong aniseed flavours to your cooking. We eat tiny quantities of fennel in the UK compared to Italy.It is a white or pale green bulb with stalks which are topped with feathery green leaves. Fennel is the same family as carrot, parsnip and celeriac. If we were to leave the flowers to grow they would produce fennel seeds, also edible of course.

Jack Buck Farms grow 80 acres of fennel which can be irrigated using water from our three reservoirs. We plant every week from April to July to give continuity of crop from June to November.The fennel bulb is very easy to damage, so it is carefully hand cut and placed into trays in the field and transported straight to the customer.
