Ingredients

  • 4 oz. 110 g salami, about 5 slices per serving
  • 1 cup (2¾ oz.) 240 ml (80 g) shredded Parmesan cheese
  • 1 tsp 1 tsp paprika powder

Making low carb simple

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat the oven to 450°F (225°C), or set your oven to broil (high heat).

  2. Place the salami slices on a baking sheet lined with parchment paper. Allow some space between the slices.

  3. Place a mound of shredded cheese on top of every slice, about 1–2 tablespoons. Sprinkle paprika powder or dry herbs on top for additional flavors.

  4. Place in the oven; bake until the cheese turns bubbly and golden brown. Check often so they don't burn.

  5. Remove from the oven and let cool. Once cool, the chips are crunchy and ready to be enjoyed!

    I see them as tasty, but not sure that dietdoctor should be encouraging eating red processed meats given the WHO study. IMO this could be done just as easily with steak or chicken that hasnt been processed.

    I love these, but instead of paprika, I use a drop of tabasco or other hot sauce on top of salami slice and spread it over salami slice, then I sprinkle cheese on top of it. Salty, spicy, crispy... Om nom nom! Real treats!

    I am on food stamps and also don't have time most days to sit down and have breakfast lunch and dinner I usually only have something when I get up and dinner when I get home so how can u help me . Plus my mom isn't willing to throw out everything bad for me and putting me at risk for failing the 2 week challenge. I can't afford all the food that I'm supposed to buy for the challenge is there a way someone can help me?

    Hi Whitney, I'm just getting started too. I wanted to get started right away and didn't have everything I needed to follow the recipes here, though they look and sound delicious. Eggs are very low carb, high protien, and inexpensive. Hard boiling them in advance makes them something that can be eaten on the go. They are versatile. Scrambled, fried, etc. Chicken thighs are often on sale. Regularly priced under $2/pound at my local Walmart. Ground beef is also on sale, too. Vegetable-wise, I often get BIG bags of frozen broccoli and cauliflower at Walmart for about $5. Coconut oil is a good all purpose fat that's nutritious and costs less than grass-fed butter. Store brand spices such as onion and garlic powder are often in the $1 range. Best of luck and congratulations for getting started. Remember you dont have to get it perfect from the start.     I actually make these in the mircorwave at home! So delicious and way easier than waiting for the oven to warm up. I use a microwave plate and usually set it for 60-130 sec...just kind of watch until you see the cheese begin to bubble. The grease from the cheese prevents it from sticking. Works great for when you first walk in the door at the end of the day and just need something really quick before you spend an hour preparing dinner.

    These are amazing, I added himalayan salt on the top and they are so tasty. Will try very thinly sliced chicken or steak in the next few days for a bit of variety. I love how crunchy these go too.

    Curious what brands people find for Salami. I've been to numerous markets and butchers and not found any salami/pepporoni/processed meats that don't have sugar in them in some form.

    You may need to cook a little longer or at a slightly higher temperature. Different brands of salamis and cheeses may have slightly different inherent moisture content.

    Hormel is at every 99 cent store. 3oz for 99cents. I buy salami. Pepperoni, soppresto (spicy salami) & they r are 0 carb. Salami, crm chz, parmesan r usually .99. Good snacks with HB eggs, celery, bell peppers, cucumbers which r all there as well. Look up Keto Connect on You Tube, they have great budget Keto videos. Even if you r on Food stamps.

    @ Whitney, keep in mind that on keto you are going to be eating a lot less! Honestly, you will. When we started, I bought all the food on the meal plan for the week. Turns out, we never ate all three meals! We had two at most, and some days only one meal and an evening snack. I ended up with three weeks of food. So don't get discouraged. The items you buy are pricier, but my budget isn't hurting at all because I'm buying a lot fewer groceries than I used to.

    It can be hard to keep them crisp but most people have luck in an airtight container on the counter or in the refrigerator.

    Just a head's up .... grated and shredded are not the same. Shredded produce thin, longer bits of cheese that maintain the shape of the hole they were shred through, whereas grated parmesan is more like a grainy powder.

    For crisp ones I imagine the salami should be very thin sliced (the same way you would slice a potato very thin in order to make a chip since slicing a potato on the thicker side would not yield a crisp "chip") and I would use the shredded, spread out well all over the salami (not piled up high on the salami).

    Planning on making these this way tonight if I can get back out to the store. If I do, I'll log my results on crispiness.

    Too good to be true. This is a brilliant recipe.

    Ours never get to the ‘how do you store these’ stage though, so can’t contribute on how to prevent sogginess.

    Sounds great! Keep in mind that certain additions can increase the carb count.
